    I took my sweet potato pancake recipe, added scrambled eggs and bacon and BOOM.  I originally posted this pancake recipe last Spring, but here it is again.

    Sweet Potato Pancakes

    You’ll need:

    1 ripe banana, mashed

    1 cup mashed sweet potatoes*

    5 eggs

    1 cup almond meal

    1 1/2 teaspoons cinnamon

    1 1/2 teaspoons baking powder

    1/4 cup almond milk

    1.  Combine the bananas, sweet potatoes and eggs in a bowl and stir well.

    2.  Add the remaining ingredients and stir until everything is mixed.

    3.  In a pre-heated, non-stick skillet over medium/low heat, pour about 1/4 cup of batter for each pancake.  Let cook for about 3-4 minutes or until bubbles start to appear and pop.  Flip the pancake over and cook for another 3 minutes.

    *For the mashed sweet potatoes, peel and cut sweet potatoes into about 1-2” pieces.  Put in a pot and cover with cold water.  Bring everything to a boil for about 10 minutes, or until the sweet potatoes are soft.  Drain and mash with a large fork.
